Ingredients

  • 1 ½ tablespoons olive oil, divided
  • 1 (15 oz) can chickpeas, rinsed, drained, and dried
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried oregano
  • ¼ teaspoon paprika
  • 2 tablespoons 2% or full-fat plain Greek yogurt
  • 1 teaspoon lemon juice
  • ½ small cucumber
  • 1 small Roma tomato, sliced
  • 1 tablespoon diced red onion
  • 2 whole wheat pitas

Instructions

  • Cook the Chickpeas: Heat 1 tablespoon of olive oil in a large skillet over high heat. Add chickpeas and stir to coat evenly. Sprinkle garlic powder, thyme, oregano, and paprika. Cook for 9-10 minutes on medium-high heat, stirring occasionally, until chickpeas are golden brown.
  • Prepare the Toppings: While the chickpeas cook, slice the cucumber and tomato, and dice the red onion.
  • Make the Tzatziki Sauce: In a small bowl, combine Greek yogurt, lemon juice, and finely grated cucumber.
  • Warm the Pitas: Heat pitas in a toaster or microwave for a few seconds.
  • Assemble the Gyros: Spread a spoonful of tzatziki sauce onto each pita, add crispy chickpeas, and top with fresh veggies.
  • Serve: Enjoy immediately!

Notes

  • For a vegan version, swap Greek yogurt for dairy-free yogurt or use hummus instead of tzatziki.
  • Customize with other veggies like shredded lettuce or swap Roma tomato for cherry tomatoes.
  • Add heat with cayenne pepper or red pepper flakes for a spicier option.
