Simple no-bake coconut bars made with just three wholesome ingredients, offering a naturally sweet, chewy, and satisfying snack or dessert with minimal effort.

Ingredients

2 cups unsweetened shredded coconut

1/2 cup almond flour (or coconut flour)

1/2 cup maple syrup

Instructions

  1. In a mixing bowl, combine the shredded coconut, almond flour, and maple syrup.
  2. Stir until the mixture is fully combined and sticky.
  3. Line an 8×8-inch baking dish with parchment paper, leaving overhang on the sides.
  4. Transfer the mixture to the dish and press it firmly into an even layer.
  5. Refrigerate for about 30 minutes, or until set.
  6. Lift out using the parchment paper and cut into bars or squares.

Notes

Press the mixture firmly to help the bars hold together.

Add a pinch of salt to balance sweetness if desired.
