A simple yet magical plum upside-down cake with caramelized plums, brown sugar, and butter baked beneath a soft, tender vanilla cake. Effortless to make and impressive to serve, this dessert is pure comfort in every slice.

Ingredients

4 large plums, sliced

1/2 cup unsalted butter, melted

3/4 cup brown sugar

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Pour the melted butter into a 9-inch round cake pan and spread evenly.
  3. Sprinkle the brown sugar evenly over the butter.
  4. Arrange the sliced plums in a single layer over the sugar.
  5. In a bowl, whisk together flour, baking powder, and salt.
  6. In another bowl, beat granulated sugar, egg, and vanilla until smooth.
  7. Alternate adding the flour mixture and milk to the wet ingredients, mixing gently until just combined.
  8. Carefully pour the batter over the plums and smooth the top.
  9. Bake for 40–45 minutes, until a toothpick inserted into the center comes out clean.
  10. Cool for 10 minutes, then invert the cake onto a serving plate.

Notes

Let the cake cool slightly before flipping for best release.

Ripe but firm plums hold their shape best.

Add cinnamon or cardamom for extra warmth if desired.
