2 medium zucchinis
1/2 cup all-purpose flour
1 large egg
1 tablespoon milk
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon dried oregano
Salt, to taste
Olive oil spray
Cut zucchini into fries or rounds.
Set up 3 bowls: one with flour, one with beaten egg and milk, and one with breadcrumbs, Parmesan, garlic powder, basil, oregano, and salt.
Dredge each zucchini piece in flour, dip in egg mixture, and coat with seasoned breadcrumbs.
Arrange fries in a single layer in the air fryer basket.
Lightly spray with olive oil and air fry at 400°F for 7–9 minutes, until golden and crispy.
Vegan option: Use a flax egg and vegan Parmesan.
