Apple and Boysenberry Cobbler

A warm and comforting apple and boysenberry cobbler with tender fruit and a lightly spiced oat topping that bakes up soft, golden, and irresistible.

Ingredients

½ cup self-raising flour

½ cup rolled oats

½ cup sugar

1 teaspoon cinnamon

½ cup milk

50g butter, melted

2 apples, thinly sliced

1 can boysenberries

Instructions

  1. Preheat the oven to 180°C fan bake.
  2. In a mixing bowl, combine the self-raising flour, rolled oats, sugar, and cinnamon.
  3. Add the milk and melted butter and stir until just combined into a thick batter.
  4. Place the sliced apples into a baking dish.
  5. Drain about half of the liquid from the boysenberries and add the berries and remaining juice to the apples. Stir gently to combine.
  6. Spoon the batter evenly over the fruit, gently spreading it to cover the top.
  7. Bake for 30–40 minutes, until the topping is golden and the fruit is bubbling.
  8. Remove from the oven and allow to cool slightly before serving.

Notes

Firm apples work best as they hold their shape during baking.

Reduce sugar slightly if using very sweet fruit.

Add nutmeg or mixed spice for extra warmth.

Serve warm with ice cream or cream for best results.
