A classic, comforting apple pie filled with tender spiced apples and baked in a flaky golden crust, delivering warm flavors and nostalgic sweetness in every slice.

Ingredients

8 medium Granny Smith or Honeycrisp apples, peeled, cored, and sliced

3/4 cup brown sugar

1/4 cup white sugar

3 tablespoons all-purpose flour

1 tablespoon fresh lemon juice

1 1/2 teaspoons ground cinnamon

1/2 teaspoon freshly grated nutmeg

1/2 teaspoon allspice

1/4 teaspoon fine sea salt

1/4 cup apple cider or apple juice

1 teaspoon vanilla extract

2 tablespoons unsalted butter, diced

2 pie crusts

1 egg

1 tablespoon water

1 tablespoon coarse sugar

Instructions

  1. Preheat the oven to 375°F (190°C). Place a baking sheet on a lower rack to catch any drips.
  2. In a large bowl, combine sliced apples, brown sugar, white sugar, flour, lemon juice, cinnamon, nutmeg, allspice, salt, apple cider, and vanilla. Toss until evenly coated and let rest for 10–15 minutes.
  3. Fit one pie crust into a 9-inch pie dish. Pour in the apple filling, mounding slightly in the center, and dot with diced butter.
  4. Cover with the second crust, seal and crimp the edges, and cut vents in the top.
  5. Whisk the egg with water and brush over the crust. Sprinkle with coarse sugar.
  6. Bake for 50–60 minutes, until the crust is deeply golden and the filling is bubbling. Cover edges with foil if they brown too quickly.
  7. Remove from the oven and cool on a wire rack for at least 2–3 hours before slicing.

Notes

Cooling fully helps the filling set for clean slices.

A mix of tart and sweet apples gives the best flavor.

Pears can replace part of the apples for variation.

Store-bought crust works well if short on time.

Serve warm or at room temperature.
