Apple Thyme Jam is a unique spread that blends sweet apples with savory thyme, creating an aromatic jam perfect for toast, cheese boards, or as a topping for meats.

Ingredients

4 large apples (Granny Smith or Honeycrisp work well)

1 ½ cups granulated sugar

2 tablespoons fresh lemon juice

1 tablespoon lemon zest

1 cup water

45 sprigs fresh thyme (plus more for garnish if desired)

1 tablespoon pectin (optional)

Instructions

  1. Peel, core, and dice the apples into small pieces. If using frozen apples, thaw them before starting.
  2. In a large saucepan, combine apples, water, lemon juice, and lemon zest. Cook over medium heat, stirring occasionally, for about 10 minutes until apples soften.
  3. Gradually add sugar and stir until it dissolves. Continue cooking to allow apples to break down and release their juices.
  4. Add the thyme sprigs (tied with kitchen twine or in an herb infuser) to the apple mixture. Simmer for 15-20 minutes, stirring occasionally.
  5. If using pectin, add it now and cook for an additional 2-3 minutes to thicken the jam.
  6. Remove the thyme sprigs and test the jam’s consistency by placing a spoonful on a cold plate. If it wrinkles and holds its shape, it’s ready.
  7. Carefully ladle the jam into sterilized jars, garnish with fresh thyme if desired, and seal tightly.
  8. Let the jam cool to room temperature before storing. Refrigerate for up to 2 weeks or process the jars for long-term storage.

Notes

For a spicier version, add a pinch of cinnamon or nutmeg.

Swap apples for pears or peaches to create different flavor profiles while keeping the thyme for its unique herby undertones.

If you prefer a vegan option, reduce the sugar and use maple syrup as a substitute.
