This Asparagus Gruyere Tart features flaky puff pastry, creamy Gruyere cheese, and fresh asparagus for a flavorful, elegant dish. Ingredients

  • 1 to 2 sheets frozen puff pastry (defrosted)
  • 1 to 2 tablespoons honey Dijon mustard with balsamic vinegar or regular Dijon mustard
  • 2 to 3 cups Gruyere cheese (freshly grated)
  • 1 1/2 pounds medium asparagus (trimmed)
  • Fresh or frozen peas (defrosted)
  • Extra virgin olive oil
  • Salt and pepper, to taste

Additional Toppings:

  • Fresh lemon zest
  • Balsamic glaze (for serving)
  • Fresh pea shoots (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the defrosted puff pastry on a lightly floured surface and place it on a parchment-lined baking sheet.
  3. Score the pastry edges about 1 inch in and pierce the center with a fork. Bake for 12-15 minutes, or until lightly golden.
  4. Remove from the oven and spread with honey Dijon mustard (or regular Dijon). Top with Gruyere cheese.
  5. Arrange asparagus over the cheese, alternating ends and tips. Add peas if desired. Drizzle with olive oil and season with salt and pepper.
  6. Bake for 20-25 minutes until the asparagus is tender.
  7. Let cool slightly before adding toppings like lemon zest and balsamic glaze. Serve warm.
