Baked Blueberry Fritter Bites are a healthier twist on the classic fried fritters. These mini bites are tender, bursting with fresh blueberries, and topped with a sweet blueberry glaze. Perfect for breakfast, brunch, or dessert, they’re an easy-to-make treat that’s both delicious and light!

Ingredients

For the Fritters:

  • 1 ½ cups all-purpose flour

  • ⅓ cup granulated sugar

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • ¼ cup unsalted butter (melted)

  • 1 large egg

  • 1 teaspoon vanilla extract

  • ½ cup blueberry Greek yogurt

  • 1 cup fresh or frozen blueberries

For the Glaze:

  • 1 cup powdered sugar

  • 12 tablespoons milk

  • 2 tablespoons blueberry jam or mashed fresh blueberries

Instructions

  • Preheat Oven:
    Preheat your oven to 350°F (175°C). Lightly grease a 24-cup mini muffin pan.

  • Mix Dry Ingredients:
    In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  • Combine Wet Ingredients:
    In a small bowl, whisk together the melted butter, egg, vanilla extract, and blueberry Greek yogurt. Add the wet mixture to the dry ingredients and stir until just combined.

  • Fold in Blueberries:
    Gently fold the fresh or frozen blueberries into the batter.

  • Fill Muffin Pan:
    Spoon the batter evenly into the muffin cups, filling them almost full.

  • Bake:
    Bake for 15 minutes, or until the tops are lightly golden brown.

  • Prepare the Glaze:
    In a small bowl, whisk together the powdered sugar, milk, and blueberry jam (or mashed fresh blueberries) until smooth.

  • Glaze the Fritters:
    Once baked, dip the tops of the fritters into the glaze and place them on a parchment-lined baking sheet. Broil for 3–4 minutes until the glaze caramelizes.

  • Cool:
    Let the fritters sit for about 15 minutes to allow the glaze to set.
