Ingredients

1 cup steamed or blanched broccoli, finely chopped

1 cup cheese (sharp cheddar, mozzarella, or your favorite variety), shredded

1/2 cup breadcrumbs

2 large eggs

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Olive oil (for brushing)

Instructions

  • Preheat the oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  • Prepare the broccoli: Steam or blanch the broccoli until tender, then finely chop.

  • Mix the ingredients: In a large bowl, combine the broccoli, cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Mix well.

  • Shape the balls: Roll the mixture into bite-sized balls using your hands or a spoon.

  • Bake: Place the balls on the prepared baking sheet, brush with olive oil, and bake for 15-20 minutes or until golden brown and crispy.

  • Serve: Let the balls cool slightly before serving. Pair with your favorite dipping sauces like ranch, marinara, or garlic aioli.

Notes

For extra heat, add chili flakes or cayenne pepper.

You can substitute broccoli with other vegetables like spinach or cauliflower.

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore crispness.

Freeze the shaped balls before baking for future use. Bake directly from the freezer, adding extra cook time.
