These Baked Potato Skins are crispy, cheesy, and loaded with savory toppings like cheddar and Monterey Jack cheeses, crispy fried onions, and fresh green onions. Easy to prepare and full of flavor, they make the perfect appetizer or side dish for any occasion, from game days to parties.

Ingredients

  • 6 small to medium Russet potatoes
  • 1 ½ tablespoons canola oil or olive oil
  • Sea salt
  • 3 tablespoons butter
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ cup finely shredded cheddar cheese
  • ½ cup finely shredded Monterey Jack cheese
  • ¼ cup crispy fried onions (or your preferred crispy topping)
  • 1 green onion, finely sliced
  • Sour cream (optional)

Instructions

  1. Prepare Potatoes: Preheat the oven to 375°F (190°C). Scrub and dry the potatoes, then prick them with a fork. Rub with oil and sprinkle with salt. Place them on a baking sheet and bake for 50-60 minutes or until tender.
  2. Scoop the Flesh: Once cool enough to handle, cut the potatoes in half lengthwise. Scoop out the flesh, leaving about 1/4 to 1/2 inch of potato along the skin.
  3. Make the Butter Mixture: Melt butter and stir in garlic powder and onion powder. Brush the mixture over the insides and outsides of the potato skins. Return them to the oven for 10 minutes, then flip and bake for another 10 minutes.
  4. Add Toppings: Remove from the oven and top each skin with cheddar, Monterey Jack cheese, and crispy fried onions. Return to the oven for 5 minutes or until the cheese is melted.
  5. Serve: Garnish with sliced green onions and optional sour cream. Serve warm.
