Bavarian Cream and Berries is a luxurious dessert featuring a rich, creamy custard base infused with vanilla and optional cardamom, topped with fresh berries. This elegant treat is perfect for special occasions and is easy to prepare ahead of time.

Ingredients

3 egg yolks

¾ cup sugar

1 tablespoon powdered gelatin

1 cup milk

1½ teaspoons vanilla extract

1 cup heavy cream

Fresh berries (for serving)

Instructions

  1. In a bowl, combine egg yolks and sugar. Beat with an electric mixer until pale and fluffy.
  2. In a jug, mix 8 tablespoons of freshly boiled water with the powdered gelatin. Stir until dissolved, then set aside.
  3. In a saucepan, heat milk and vanilla extract over medium heat until boiling.
  4. Slowly add hot milk to egg mixture, whisking constantly. Gradually add this mixture to the saucepan and cook for 2 minutes to thicken.
  5. Remove from heat and add dissolved gelatin, stirring until fully combined.
  6. Allow to cool for 10 minutes. Whip the heavy cream until stiff peaks form and gently fold into the cooled custard.
  7. Pour into molds, refrigerate for at least 6 hours or overnight to set.
  8. To serve, turn out onto plates, garnish with fresh berries, and enjoy!

Notes

Add flavors like orange zest, lemon zest, or coffee to infuse the cream.

Top with other fruits like mango, peaches, or kiwi for a tropical twist.

For a chocolate version, stir melted chocolate into the custard before folding in whipped cream.
