Blueberry Cream Cheese Bread is a moist and flavorful loaf that combines tart blueberries with a rich cream cheese swirl. Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 1½ cups blueberries (fresh or frozen)

Cream Cheese Filling:

  • 8 ounces cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the Oven: Preheat to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  • Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • Cream Butter and Sugar: In a large bowl, cream butter and sugar until light and fluffy (2-3 minutes).
  • Add Wet Ingredients: Beat in eggs one at a time, then stir in vanilla.
  • Combine Batter: Gradually alternate adding the dry ingredients and milk to the wet mixture, starting and ending with the dry. Avoid overmixing.
  • Fold in Blueberries: Gently fold blueberries into the batter. Toss frozen blueberries with a little flour if needed.
  • Prepare Cream Cheese Filling: In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
  • Assemble: Pour half the batter into the loaf pan. Spread cream cheese filling evenly, then top with the remaining batter.
  • Bake: Bake for 50-60 minutes or until a toothpick comes out clean. Cover with foil during the last 15 minutes if browning too quickly.
  • Cool and Serve: Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before slicing.
