This homemade meatloaf is the ultimate comfort food, offering a savory, juicy beef interior with a flavorful ketchup-brown sugar glaze. Simple to make, it’s perfect for a hearty family dinner and pairs wonderfully with mashed potatoes and green beans. The addition of beef broth and a sweet glaze takes this classic dish to a whole new level of deliciousness.

Ingredients

1 lb ground beef (80-90% lean)

1 cup breadcrumbs (or panko)

¼ cup beef broth

1 egg

2 tablespoons fresh parsley, chopped

1 tablespoon Worcestershire sauce

¼ cup ketchup

½ teaspoon salt

½ teaspoon pepper

½ teaspoon garlic powder

½ teaspoon onion powder

For the glaze:

¼ cup ketchup

2 tablespoons BBQ sauce

2 tablespoons brown sugar

Instructions

  • Mix the meatloaf: In a large bowl, combine ground beef, breadcrumbs, beef broth, egg, parsley, Worcestershire sauce, ketchup, salt, pepper, garlic powder, and onion powder. Mix until just combined. Avoid overmixing to keep the meatloaf tender.

  • Prepare the glaze: In a small bowl, mix together the ketchup, BBQ sauce, and brown sugar for the glaze.

  • Shape and bake: Transfer the meat mixture into a foil-lined, greased 9×5-inch loaf pan, or shape into a loaf on a baking sheet. Spread the glaze over the top of the meatloaf. Bake at 375°F for 45 minutes, or until the internal temperature reaches 160°F.

Notes

Ground turkey version: Substitute ground beef with ground turkey for a lighter version, though it may not be as juicy.

Cheese stuffed: Add cheese inside the meatloaf or on top before glazing for a cheesy surprise.

Add veggies: Incorporate finely chopped onions, bell peppers, or carrots into the meat mixture for added texture and flavor.
