This Black Forest Chia Pudding combines rich, creamy chocolate and tart cherries for a delicious vegan dessert. Ingredients

  • 1/2 teaspoon vanilla extract

  • For the Cherry Compote:
  • 1 cup fresh cherries, pitted and halved

  • 1 teaspoon lemon juice

  • Maple syrup, to taste (optional)

  • For the Topping:
  • Whipped coconut cream (store-bought or homemade)

Instructions

Step 1: Prepare the Whipped Coconut Cream

  1. Whip chilled coconut cream in a mixing bowl until fluffy. Refrigerate until ready to serve.

Step 2: Prepare the Chocolate Chia Pudding
2. In a separate bowl, mix cocoa powder, coconut milk, maple syrup, and vanilla extract until smooth.
3. Stir in the chia seeds and combine well.
4. Cover and refrigerate the pudding for at least 4 hours or overnight to thicken.

Step 3: Make the Cherry Compote
5. In a small saucepan over medium-low heat, combine cherries, lemon juice, and maple syrup (if desired). Cook for 5-10 minutes until cherries soften. Remove from heat and cool.

Step 4: Assemble the Pudding
6. Layer the chocolate chia pudding with cherry compote in serving glasses and top with whipped coconut cream.
7. Optionally garnish with chocolate shavings or fresh cherries.
