Ingredients

2 ½ cups (315g) all-purpose flour

1 cup (85g) Dutch-process cocoa powder

2 tsp baking powder

1 tsp baking soda

½ tsp salt

1 cup (240ml) buttermilk, room temperature

1 cup (240ml) hot water or brewed coffee

¾ cup (180ml) vegetable oil

2 cups (400g) granulated sugar

2 large eggs

1 tbsp vanilla extract

2 tsp black gel food coloring

1 cup (226g) unsalted butter, softened

16 oz (450g) cream cheese, room temperature

45 cups (480–600g) powdered sugar

1 tbsp vanilla extract

Optional: extra cocoa powder or black gel food coloring

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line three 8-inch cake pans with parchment paper and grease the sides of the pans.
  2. Mix Dry Ingredients: In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. Mix Wet Ingredients: In a separate bowl, whisk together buttermilk, vegetable oil, sugar, eggs, vanilla extract, and black food coloring until smooth and well combined.
  4. Combine: Alternate adding dry ingredients and hot water (or brewed coffee) to the wet mixture. Stir until the batter is smooth. Be careful not to overmix.
  5. Bake: Divide the batter evenly among the three prepared cake pans. Bake for 28–32 minutes, or until a toothpick comes out clean. Let cakes cool completely on a wire rack.
  6. Make the Frosting: Beat softened butter and cream cheese until light and fluffy. Gradually add powdered sugar and mix until smooth. Add vanilla extract. Tint with black food coloring or cocoa powder for a richer look.
  7. Assemble the Cake: Once cakes have cooled, level them and frost with the cream cheese frosting between layers and on top. Decorate with spooky Halloween-themed toppings.
