Ingredients

1 cup all-purpose flour

½ cup rolled oats

½ cup brown sugar

¼ teaspoon salt

½ teaspoon baking powder

½ cup unsalted butter, melted

1 cup fresh blackberries

¼ cup granulated sugar

1 tablespoon lemon juice

½ cup pistachios, roughly chopped

1 teaspoon vanilla extract

Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, combine flour, rolled oats, brown sugar, salt, and baking powder. Stir to combine.
  3. In a separate bowl, mix melted butter and vanilla extract until combined.
  4. Gradually add the wet ingredients to the dry ingredients and mix until a crumbly dough forms.
  5. Press about two-thirds of the dough mixture into the bottom of the baking dish to form the crust. Set aside the remaining dough mixture for topping.
  6. In another bowl, toss the blackberries with granulated sugar and lemon juice. Spread the blackberry mixture evenly over the crust.
  7. Sprinkle the remaining crumb mixture over the blackberries, and top with chopped pistachios.
  8. Bake for 30-35 minutes or until golden brown. Let the bars cool for 1 hour, then slice into squares.
  9. If desired, dust the bars with powdered sugar before serving.
