Ingredients

2 tablespoons unsalted butter

2 large eggs, beaten

2 tablespoons milk

½ teaspoon vanilla extract

Pinch of nutmeg

⅓ cup sugar

2 teaspoons cinnamon

8 slices sandwich bread, crusts removed

4 ounces cream cheese, softened

½ cup blueberries

Instructions

  1. Melt butter in a large skillet over medium-high heat. Set aside while preparing the roll-ups.
  2. In a bowl, whisk together eggs, milk, vanilla extract, and nutmeg. Set aside.
  3. In a separate bowl, combine sugar and cinnamon for the coating and set aside.
  4. Flatten the bread slices with a rolling pin. Spread cream cheese on each slice and top with blueberries. Roll tightly from the bottom to the top.
  5. Dip each roll in the egg mixture, ensuring it’s evenly coated on all sides.
  6. Cook the roll-ups in batches in the skillet for 2-3 minutes on each side until golden brown and crispy.
  7. Immediately coat the cooked roll-ups in the cinnamon sugar mixture.
