Blueberry Hand Pies are the perfect portable dessert with a flaky, buttery crust and a sweet, tangy blueberry filling. These mini pies are easy to make and great for any occasion, from picnics to parties. Topped with a simple lemon glaze, they’re a bite-sized treat everyone will love!

Ingredients

For The Crust:

2½ cups unbleached all-purpose flour

1 tsp salt

1 tbsp sugar

1 cup cold butter, cubed

⅓ cup ice water

For The Filling:

1½ cups blueberries

2 tbsp sugar

3 tbsp cornstarch

1 tbsp lemon juice

1 egg (for egg wash)

For The Glaze:

2 cups powdered sugar

¼ cup lemon juice

Instructions

  1. Prepare the Dough:

    • In a large bowl, mix the flour, salt, and sugar. Add the cold butter and cut it into the flour mixture until it resembles coarse crumbs.

    • Slowly add ice water, stirring until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.

  2. Make the Filling:

    • In a small bowl, combine the blueberries, sugar, cornstarch, and lemon juice.

  3. Assemble the Pies:

    • Roll out the dough and cut it into circles.

    • Place a spoonful of the blueberry filling on each circle, fold them over, and press the edges together to seal. Brush with the egg wash.

  4. Bake:

    • Preheat the oven to 375°F (190°C).

    • Place the pies on a baking sheet and bake for 20-25 minutes, or until golden brown.

  5. Make the Glaze:

    • Mix the powdered sugar and lemon juice to create a glaze. Drizzle it over the warm pies before serving.

Notes
