Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 2 ½ cups cake flour
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon, divided
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup milk
  • 1 ½ cups powdered sugar

Instructions

  1. Make the Dough:
    Cream together the butter and granulated sugar, followed by the brown sugar until smooth. Add the eggs and vanilla extract, mixing until fully combined. Gradually add the cake flour, cornstarch, salt, and 1 teaspoon of cinnamon. Chill the dough for 1 hour.
  2. Prepare the Filling:
    In a small bowl, mix the brown sugar, cinnamon, and softened butter to form the filling. Roll the filling into small balls.
  3. Assemble the Cookies:
    Scoop out dough, flatten it, and place a ball of the cinnamon filling in the center. Seal the dough around the filling and roll it into a ball. Place the filled dough balls on a baking sheet.
  4. Bake:
    Preheat the oven to 350°F (175°C). Bake the cookies for 11-13 minutes, or until just set.
  5. Make the Glaze:
    Whisk powdered sugar, milk, and the remaining cinnamon to create the glaze. Drizzle the glaze over the cooled cookies.
