These Buckeye Brownie Bites combine a rich, fudgy brownie base with a creamy peanut butter layer and a topping of melted chocolate chips. A delightful dessert for peanut butter and chocolate lovers, perfect for any occasion.

Ingredients

1 cup unsalted butter, melted

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

½ cup cocoa powder

½ teaspoon salt

For the Peanut Butter Layer:

1 cup creamy peanut butter

1 cup powdered sugar

½ cup unsalted butter, softened

½ teaspoon vanilla extract

For the Topping:

1 ½ cups semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan or line with parchment paper.
  2. In a large bowl, mix the melted butter, granulated sugar, eggs, and 1 teaspoon vanilla extract until well combined.
  3. In another bowl, whisk together flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  4. Spread half of the brownie batter evenly into the prepared pan.
  5. In a medium bowl, mix peanut butter, powdered sugar, softened butter, and ½ teaspoon vanilla extract until smooth and creamy. Drop spoonfuls of the mixture over the brownie batter and spread gently with a spatula.
  6. Pour the remaining brownie batter over the peanut butter layer and spread evenly. Sprinkle the chocolate chips over the top.
  7. Bake for 30-35 minutes or until a toothpick comes out with moist crumbs. Let cool completely in the pan before cutting into squares.
