Enjoy the familiar Caesar taste with a healthier twist!

Ingredients

1/4 cup olive oil

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

2 cloves garlic, minced

2 anchovy fillets, minced (or 1 teaspoon anchovy paste)

2 tablespoons grated Parmesan cheese

1/2 teaspoon black pepper

Salt to taste

Instructions

  1. In a medium bowl, whisk together lemon juice, Dijon mustard, apple cider vinegar, garlic, and anchovy until well combined.

  2. Slowly drizzle in olive oil while whisking constantly to emulsify the dressing.

  3. Stir in Parmesan cheese and black pepper.

  4. Taste and adjust seasoning with salt if needed.

  5. Refrigerate for 15-20 minutes before serving for best flavor.

Notes

Storage: Store in an airtight container in the fridge for up to 5 days. If it thickens after refrigeration, whisk to bring it back to the desired consistency.

Variations: For a creamier version, blend in a food processor. If avoiding anchovies, use capers instead for a briny alternative.
