Ingredients

2 boneless, skinless chicken breasts, sliced

1 tablespoon Cajun seasoning

1 tablespoon olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

2 garlic cloves, minced

1 small red onion, sliced

Salt and black pepper, to taste

Fresh parsley for garnish (optional)

Instructions

  1. Season chicken slices evenly with Cajun seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook for 5-6 minutes until browned and cooked through. Remove chicken and set aside.
  4. In the same skillet, add bell peppers, onion, and garlic. Sauté for 4-5 minutes until vegetables are tender-crisp.
  5. Return chicken to the skillet, toss to combine, and cook for an additional 2 minutes.
  6. Season with salt and pepper as needed.
  7. Garnish with fresh parsley if desired and serve hot.
