Ingredients

Sugar Cookie Dough:

3/4 cup unsalted butter, softened

3/4 cup sugar

2 cups all-purpose flour

Cream Cheese Frosting:

4 ounces cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1/2 teaspoon vanilla extract

12 tablespoons milk or heavy cream

Toppings:

12 cups finely cubed Granny Smith apple (treated to prevent browning)

1/2 cup chopped pecans

1/2 cup caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla, mixing until combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet mixture until a soft dough forms.
  4. Press dough evenly into the prepared pan. Bake for 12–14 minutes, or until edges are lightly golden. Let cool completely.
  5. Prepare frosting: beat cream cheese and butter until smooth and fluffy. Add powdered sugar, vanilla, and milk or cream; beat until light and creamy.
  6. Spread frosting evenly over cooled cookie crust.
  7. Top with diced apples and chopped pecans.
  8. Drizzle caramel sauce over the top.
  9. Cut into squares and serve immediately, or chill until ready to serve.
