Ingredients

9 cups Rice Chex cereal

1 cup white chocolate chips

1 cup caramel bits

1 tsp vanilla extract

Pinch of salt

1 Tbsp apple pie spice

¼ cup powdered sugar

¼ cup granulated sugar

½ cup dried apple chips, crushed

Instructions

  1. Prepare cereal: Add 9 cups of Rice Chex cereal to a large mixing bowl and set aside.
  2. Melt the coating: In a microwave-safe bowl, combine white chocolate chips and caramel bits. Heat in 30-second intervals, stirring after each, until melted and smooth. Stir in vanilla extract and a pinch of salt.
  3. Coat the cereal: Pour the melted mixture over the cereal. Gently stir with a spatula until evenly coated.
  4. Add the sugar mixture: In a separate bowl, combine apple pie spice, powdered sugar, and granulated sugar. Sprinkle over coated cereal and toss until evenly covered.
  5. Mix in apple chips: Fold in crushed dried apple chips for extra crunch.
  6. Cool and serve: Spread the coated cereal on parchment paper to cool completely before serving or storing.

Notes

Do not substitute caramel bits with caramel sauce—it can make the mix soggy.

For stronger apple flavor, add a few drops of apple extract to the caramel mixture.

Add chopped nuts or pretzels for extra crunch and balance.

Ensure cereal is coated evenly by gently folding with a large spatula.

Use gluten-free Rice Chex for a gluten-free version.
