Ingredients

1 Granny Smith apple

1 red delicious apple

2 cups matchstick carrots

½ cup diced onion

½ cup dried cranberries

1 cup vanilla yogurt

½ cup mayonnaise

2 tablespoons sugar

Salt and pepper to taste

1 can mandarin segments (drained)

Instructions

  • Prepare the Apples:
    Slice the Granny Smith and red delicious apples into matchsticks. Toss with lemon juice to prevent browning.

  • Combine Ingredients:
    In a large bowl, add the matchstick apples, carrots, diced onions, and dried cranberries. Stir to mix.

  • Make the Dressing:
    In a small bowl, combine the vanilla yogurt, mayonnaise, sugar, salt, and pepper. Stir until smooth.
