Carrot Cake Blondies are a soft, spiced dessert that combines the classic flavors of carrot cake in a convenient, portable bar form. With grated carrots, warm spices, and optional nuts or raisins, these blondies offer a delightful balance of sweetness and texture, perfect for any occasion.

Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

½ cup unsalted butter, melted

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup grated carrots (about 2 medium carrots)

½ cup chopped walnuts or pecans (optional)

½ cup raisins or coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, melt the unsalted butter. Add the brown sugar, eggs, and vanilla extract, then mix until well combined.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Gently fold in the grated carrots, walnuts, and raisins (or coconut, if using).
  6. Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
  7. Place the pan in the oven and bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let the blondies cool in the pan for around 15-20 minutes. Then, lift them out using the parchment paper and let them cool completely on a wire rack.
