Catch a Husband Cake is a Brazilian dessert with a flan-like texture, made with coconut milk, sweetened condensed milk, and eggs. This creamy, tropical cake is sweet, smooth, and melts in your mouth.

Ingredients

1 can (14 oz) sweetened condensed milk

1 can (13.5 oz) coconut milk

1 cup whole milk

4 large eggs

1 cup all-purpose flour

1 cup sugar

2 tablespoons butter, melted

1 teaspoon vanilla extract

1 tablespoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan with butter or cooking spray.
  2. In a blender or food processor, combine the sweetened condensed milk, coconut milk, whole milk, eggs, flour, sugar, melted butter, vanilla extract, and baking powder. Blend until smooth and well combined.
  3. Pour the batter into the prepared bundt pan. Place the pan in a larger pan or roasting dish and add hot water to the larger pan, about halfway up the sides of the bundt pan. This water bath ensures even baking.
  4. Bake for 50–60 minutes or until a toothpick comes out clean. The top should be lightly golden and the cake firm yet slightly jiggly.
  5. Cool for 15 minutes, then transfer to the fridge and chill for at least 2 hours.
  6. Garnish with shredded coconut and serve chilled.

Notes

Store leftovers in the refrigerator for up to 3 days.

This cake can be made ahead of time and stored in the fridge to allow it to set properly.

For a tropical twist, add chopped pineapple or mango to the batter.
