Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or beef broth
  • 1 cup milk or cream
  • 1 ½ cups shredded cheddar cheese (or your favorite cheese)
  • Optional veggies: 1 cup carrots, diced and/or 1 cup celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  • Brown the Beef – In a large pot, brown the ground beef over medium heat, breaking it into small crumbles. Drain any excess fat.
  • Sauté Onions and Garlic – Add the chopped onion and minced garlic to the pot and sauté until softened (about 3-5 minutes).
  • Add Broth and Potatoes – Stir in the broth and diced potatoes. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
  • Add Milk and Cheese – Stir in the milk or cream, followed by the shredded cheddar cheese. Stir until the cheese is melted and smooth.
  • Season and Serve – Taste the soup and adjust the seasoning with salt, pepper, thyme, and parsley. Serve hot with optional toppings like cooked halal sausage or fresh herbs.

Notes

  • Low-Carb Option: Swap potatoes for cauliflower for a keto-friendly version.
  • Vegetarian Option: Replace ground beef with plant-based alternatives or lentils for a meat-free version.
  • Spicy Kick: Add diced jalapeños, cayenne pepper, or hot sauce to spice things up.
  • Cheese Variations: Try Monterey Jack, Gouda, or Gruyère for a different flavor profile.
