Cheesy Loaded Meatloaf Casserole takes the classic meatloaf to the next level with a cheesy, savory twist. Ground beef is combined with gooey cheese, breadcrumbs, and zesty seasonings, then topped with melted cheddar, mozzarella, and Parmesan for a hearty, comforting dish.

Ingredients

For the Crust:

1 pound ground beef

1 cup breadcrumbs

2 large eggs

1/2 cup milk

1/4 cup ketchup

1 teaspoon Worcestershire sauce

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

For the Topping:

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/4 cup chopped green onions

1/4 cup shredded Parmesan cheese

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C).
  2. Mix the Meatloaf Base: In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, and milk. Stir in the ketchup, Worcestershire sauce, garlic powder, onion powder, dried oregano, salt, and black pepper until the mixture is evenly combined.
  3. Add the Cheese and Extras: Add 1/2 cup of shredded cheddar cheese, 1/4 cup mozzarella cheese, and chopped green onions to the mixture. Gently fold everything together, being careful not to overwork the meat mixture.
  4. Shape the Meatloaf: Transfer the meat mixture to a 9×13-inch casserole dish. Press it down evenly to form a loaf shape.
  5. Add Cheese Topping: Top the meatloaf with the remaining shredded cheddar cheese, mozzarella cheese, and Parmesan cheese.
  6. Bake the Casserole: Place the casserole dish in the preheated oven and bake for 35-40 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
  7. Rest and Serve: Remove the casserole dish from the oven and let the meatloaf rest for about 5 minutes before slicing. This helps the meatloaf set and makes it easier to serve.
  8. Enjoy: Serve warm and enjoy your cheesy loaded meatloaf casserole!

If you prefer a leaner version, substitute half of the ground beef with ground turkey .

For a spicier kick, add a teaspoon of hot sauce or red pepper flakes to the meat mixture.
