These Cheesy Mashed Potato Puffs are crispy on the outside and creamy and cheesy on the inside. A great way to use up leftover mashed potatoes, these puffs make a delicious snack, appetizer, or side dish. Quick to prepare and easy to customize with your favorite ingredients!

Ingredients

  • Mashed potatoes (leftover or freshly made) – 2 cups
  • Shredded cheddar cheese – 1 cup
  • Grated Parmesan cheese – ¼ cup
  • Large eggs – 2
  • Milk – ¼ cup
  • Green onions – 2, chopped
  • Salt and pepper – to taste

Instructions

1. Preheat the Oven

1️⃣ Preheat your oven to 400°F (200°C). Grease a muffin tin or line it with cupcake liners.

2. Mix Ingredients

2️⃣ In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, and chopped green onions. Season with salt and pepper. Stir until everything is well mixed.

3. Fill the Muffin Tin

3️⃣ Spoon the mixture into the muffin tin, filling each cup about ¾ full.

4. Bake

4️⃣ Bake for 20-25 minutes, or until the tops are golden brown and slightly crispy.

5. Cool and Serve

5️⃣ Let the puffs cool for a few minutes before removing them from the tin. Serve warm with sour cream, ketchup, or your favorite dipping sauce.

Notes

Herbed Puffs – Add fresh or dried herbs like parsley, thyme, or rosemary for extra flavor.
Spicy Puffs – Mix in some finely chopped jalapeños or red pepper flakes for a spicy kick.
No Green Onions? – Substitute with garlic or chives if you prefer.
