Ingredients

1 cup unsalted butter, softened

1 cup brown sugar

1/2 cup granulated sugar

2 large eggs

1 tbsp maple syrup

2 tsp vanilla extract

2 1/4 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp ground cloves

1/4 tsp allspice

1/4 tsp ground ginger

1 cup white chocolate chips (optional)

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Cream the butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

  • Add the eggs and flavorings: Beat in the eggs one at a time, then add the maple syrup and vanilla extract, mixing until combined.

  • Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, allspice, and ginger.

  • Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until fully combined.

  • Fold in the chocolate chips: If using, fold in the white chocolate chips.

  • Scoop the dough: Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing evenly.

  • Bake: Bake for 10–12 minutes, or until the edges are golden and the centers are soft.

  • Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, use dark brown sugar instead of light brown sugar.
