Chewy Spicy Oatmeal Raisin Cookies are hearty, soft, and warmly spiced with cinnamon, nutmeg, and ginger. Packed with oats and raisins, they’re a cozy treat perfect for snacking, gifting, or enjoying with coffee or tea.

Ingredients

1 cup butter, softened

1 cup brown sugar, packed

1/4 cup granulated sugar

2 whole eggs

2 teaspoons pure vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups all-purpose or whole wheat pastry flour

3 1/4 cups old-fashioned oats

1 cup raisins

1 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar in a large bowl until light and fluffy.
  3. Beat in eggs and vanilla extract until well combined.
  4. Add cinnamon, nutmeg, ginger, baking soda, and salt; mix until incorporated.
  5. Stir in flour, oats, raisins, and nuts (if using) until dough comes together.
  6. Scoop dough with a cookie scoop or tablespoon onto prepared baking sheet, spacing about 2 inches apart.
  7. Bake for 8–10 minutes, until edges are lightly golden.
  8. Cool cookies on the baking sheet for 3 minutes before transferring to a wire rack.

Notes

Swap raisins for dried cranberries, chopped dates, or other dried fruit.

Add white chocolate chips, dark chocolate chips, or shredded coconut for variety.

Use dark brown sugar for a richer flavor.

Chilling the dough for 30 minutes makes cookies thicker.

Store with a slice of bread in the container to keep cookies soft.
