Ingredients

2 cups rolled oats

1 cup almond flour

1/2 cup coconut sugar

1/2 cup unsweetened applesauce

2 tablespoons maple syrup

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

2 cups diced apples

1 tablespoon lemon juice

1/2 cup chopped walnuts or pecans (optional)

1/4 cup vegan caramel sauce (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together oats, almond flour, coconut sugar, baking powder, cinnamon, and nutmeg.
  3. In a separate bowl, mix applesauce, maple syrup, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the diced apples and chopped nuts if using.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart.
  7. Gently flatten slightly if a crispier edge is desired.

  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
