Chicken Marsala with Mushrooms is a classic Italian-American dish featuring tender chicken breasts cooked in a savory sauce made with earthy mushrooms. Ingredients

4 boneless, skinless chicken breasts

1/2 cup all-purpose flour

1 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

2 tbsp butter

8 oz cremini or button mushrooms, sliced

3/4 cup white grape juice or apple juice

1/2 cup chicken broth

2 tbsp heavy cream (optional for extra richness)

Fresh parsley for garnish

Instructions

  1. Flatten the chicken breasts to an even thickness using a meat mallet. This ensures they cook evenly.

  2. In a shallow dish, combine flour, salt, and pepper. Dredge the chicken breasts in the flour mixture, coating both sides.

  3. Heat olive oil and butter in a large skillet over medium-high heat. Once hot, add the chicken and cook for 4-5 minutes per side, until golden brown and cooked through. Remove the chicken and set aside.

  4. Add the mushrooms to the skillet and sauté for about 5 minutes, until tender and browned.

  5. Pour in the white grape juice (or apple juice) and chicken broth. Use a wooden spoon to scrape up the browned bits from the bottom. Let it simmer for 5 minutes.

  6. Stir in heavy cream if desired, for a creamier sauce.

  7. Return the chicken to the skillet, spooning the sauce over it. Simmer for another 5 minutes to heat through.

  8. Garnish with fresh parsley and serve immediately.
