Chinese Doughnut Sticks (Youtiao) are a crispy, comforting treat with a golden brown exterior and chewy interior. Traditionally enjoyed with soy milk or congee, this simplified recipe brings the authentic flavor of Chinese street food right to your kitchen. They’re easy to make, perfectly crispy, and offer a savory snack experience.

Ingredients

2½ cups all-purpose flour

1 tsp aluminum-free baking powder

½ tsp baking soda

¾ tsp salt

1 large egg

¾ cup water

1 tbsp neutral oil (plus more for frying)

Extra flour for dusting

Instructions

  1. Prepare the Dough:
    • In a large mixing bowl, sift together the flour, baking powder, baking soda, and salt.
    • In a separate bowl, beat the egg, then mix in the water and 1 tablespoon of oil.
    • Gradually add the wet ingredients to the dry ingredients, stirring until a shaggy dough forms.
  2. Knead the Dough:
    • Knead the dough until it’s smooth and elastic, about 8-10 minutes.
    • Cover the dough with a damp cloth and let it rest for 30 minutes.
    • After 30 minutes, knead the dough briefly again and cover it again to let it rest for at least 1 hour (you can rest it overnight in the fridge for even better results).
  3. Shape the Dough:
    • Roll out the dough on a floured surface into a rectangle about ½ inch thick.
    • Cut the dough into strips that are 1 inch wide and 4-5 inches long.
    • Stack two strips of dough on top of each other and use a chopstick to press a line down the center to seal them together.
  4. Fry the Youtiao:
    • Heat oil in a deep pot to 375°F (190°C). The oil should be deep enough to submerge the dough sticks.
    • Carefully stretch each dough pair slightly and gently lower them into the hot oil.
    • Fry the dough sticks while turning constantly for 2-3 minutes or until they are golden brown and puffed up.
  5. Drain and Serve:
    • Remove the cooked dough sticks from the oil and drain them on paper towels.
    • Serve the Youtiao warm with soy milk, rice porridge, or enjoy them on their own for a delicious snack.

Notes

Sweet Version: For a sweeter variation, dust the Youtiao with powdered sugar or drizzle them with honey after frying.

Spicy: Add a pinch of chili powder or cayenne pepper to the dough for a spicy twist.

Filling Option: For a twist on the classic, you can stuff the dough with red bean paste or a sweet custard before frying.
