Chocolate Covered Stuffed Dates are a luxurious and healthy treat made by filling Medjool dates with almond or peanut butter, coating them in dark chocolate, and topping with crushed nuts, pistachios, and rose petals. These elegant bites are perfect for dessert, a snack, or a gift.

Ingredients

20 Medjool dates, pitted

1/2 cup almond butter or peanut butter

1/4 cup chopped walnuts or roasted almonds (optional for crunch)

200g dark chocolate, melted

100g white chocolate or ruby chocolate (optional, for drizzling)

2 tbsp crushed pistachios

2 tbsp crushed hazelnuts or almonds

2 tbsp dried edible rose petals

Instructions

  1. Prep the Dates: Slice each date lengthwise, ensuring not to cut all the way through, and remove the pit.
  2. Stuff the Dates: Fill each date with about 1 teaspoon of almond butter (or preferred nut butter). Optionally, place one or two whole nuts inside the date for added crunch.
  3. Dip in Chocolate: Melt the dark chocolate in a double boiler or microwave. Dip each stuffed date into the dark chocolate, coating halfway or fully. Place on a parchment-lined tray.
  4. Decorate: While the chocolate is still wet, drizzle melted white or ruby chocolate over the dates. Sprinkle with crushed pistachios, nuts, or rose petals.
  5. Chill: Refrigerate the tray for 15-20 minutes to allow the chocolate to set and harden.
  6. Serve or Gift: Serve the stuffed dates or package them up as a gift after the chocolate has set.

Notes

Substitute cashew butter or sunflower seed butter for a different flavor.

For a vegan version, use dairy-free chocolate and plant-based nut butter.

Top with shredded coconut, cacao nibs, or sea salt for extra flavor options.
