Ingredients

  • Brown sugar
  • Baking cocoa powder (Ghirardelli recommended)
  • Large eggs
  • Heavy whipping cream
  • Vanilla extract

For the Ganache Topping:

  • Semi-sweet chocolate bar
  • Heavy whipping cream
  • Butter
  • Reddi-Wip (for garnish)
  • Chocolate syrup (for garnish)

Instructions

  • Prepare the Crust: Crush graham crackers and combine with sugar, cocoa, and melted butter. Press into the bottom of a springform pan.
  • Make the Cheesecake Filling: Melt bittersweet chocolate and blend with softened cream cheese, sugar, cocoa, eggs, cream, and vanilla in a food processor. Pour into the prepared crust.
  • Bake the Cheesecake: Bake at 325°F for 75-80 minutes, until the center is set but slightly jiggly. Cool in the pan, then refrigerate for 4-6 hours.
  • Make the Ganache: Heat cream and butter, then add chopped chocolate. Stir until smooth, cool to room temperature, and pour over the cheesecake.
  • Chill and Serve: Let the ganache set for an hour before serving. Garnish with whipped cream and chocolate syrup for a beautiful presentation.
