Ingredients

For the Granola:

3 cups rolled oats

1 cup unsalted peanuts (chopped or whole)

½ cup honey or maple syrup

½ cup creamy peanut butter

½ cup cocoa powder

1 teaspoon vanilla extract

½ teaspoon salt

½ cup chocolate chips (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped peanuts, cocoa powder, and salt. Stir well to evenly distribute.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), creamy peanut butter, and vanilla extract until fully combined and smooth.
  4. Combine Mixtures: Pour the wet mixture over the dry ingredients. Stir until the oats and peanuts are evenly coated with the peanut butter and cocoa mixture.
  5. Spread on Baking Sheet: Transfer the granola mixture to the prepared baking sheet, spreading it out evenly in a thin layer.
  6. Bake: Place the baking sheet in the preheated oven and bake for 25–30 minutes, stirring halfway through to ensure even browning. Watch closely to prevent burning.
  7. Add Chocolate Chips: If using chocolate chips, sprinkle them over the granola immediately after removing it from the oven. Let the granola cool completely on the baking sheet.

Notes

For a nut-free version, replace peanuts with sunflower seeds.

Boost flavor with cinnamon or nutmeg for a warm, aromatic twist.

Incorporate dried fruits like cranberries or raisins after baking for a chewy contrast.

Use dark cocoa powder for a richer chocolate flavor.

For added protein, mix in protein powder before baking.
