Chocolate Scotcheroo Bars are a no-bake treat that combines peanut butter, chocolate, and butterscotch in a crunchy, sweet, and chewy bar. Perfect for any occasion or quick snack!

Ingredients

1 cup white sugar

1 cup light corn syrup

1 cup peanut butter

6 cups crispy rice cereal

1 cup semisweet chocolate chips

1 cup butterscotch chips

Instructions

  1. Butter a 9×13-inch baking pan and set aside.
  2. In a saucepan over medium heat, combine the white sugar and corn syrup. Bring to a rolling boil, then remove from heat.
  3. Stir in the peanut butter until fully blended, then mix in the crispy rice cereal until evenly coated.
  4. Press the mixture into the prepared pan and set aside to cool slightly.
  5. In a glass bowl, melt the semisweet chocolate chips and butterscotch chips together in the microwave, stirring occasionally, until smooth and well blended.
  6. Pour the melted chocolate and butterscotch mixture over the cereal mixture, spreading it evenly across the top.
  7. Chill the bars in the refrigerator until set, about 20 minutes.
  8. Once chilled, cut into squares and enjoy!

Notes

Add chopped peanuts or any other nuts to the cereal mixture for extra crunch.

Use all chocolate chips or add white chocolate chips for a chocolate overload.

For a healthier twist, use whole grain cereal like Special K™.

Mix in mini marshmallows for a gooey, sweet texture.
