These Cinnamon Roll Cookies capture all the warm, comforting flavors of classic cinnamon rolls in a soft, chewy, and portable cookie form. Perfect for snacks, parties, or cozy treats at home, they are easy to make and customizable with different icings and fillings.

Ingredients

1 batch sugar cookie dough (homemade or store-bought)

½ cup butter, slightly softened

2 tablespoons cinnamon

¼ cup sugar (brown sugar can be used)

1 cup vanilla icing (can substitute with cream cheese or maple icing)

2 tablespoons milk (adjust for icing consistency)

Instructions

  1. Prepare the dough by mixing sugar cookie dough ingredients in a large bowl until well combined. Chill the dough in the refrigerator for 30–60 minutes.
  2. In a separate bowl, combine the cinnamon and sugar thoroughly for the filling. Set aside.
  3. Roll the dough out on a floured surface into a rectangle. Spread the softened butter evenly over the dough, then sprinkle the cinnamon-sugar mixture on top.
  4. Starting from one edge, roll the dough tightly into a log. Chill the log for about 15 minutes before slicing.
  5. Cut the chilled log into ½-inch thick slices. Bake at 350°F (175°C) for 10–12 minutes, until edges are slightly golden.
  6. Allow cookies to cool for a few minutes on the baking sheet before transferring to a wire rack. Drizzle with vanilla icing while still warm.

Notes

Icing Options: Swap vanilla icing with cream cheese, chocolate, or maple icing.

Add Nuts: Sprinkle chopped pecans or walnuts in the filling for extra crunch.

Spice It Up: Add a pinch of nutmeg or cardamom to the cinnamon sugar for a warm, aromatic flavor.

Mini Version: Make smaller cookies for bite-sized treats perfect for parties.
