Ingredients

For the Muffins:

  • 4 cups day-old bread, cubed
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon

For the Cinnamon Sugar Topping:

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 2 tbsp melted butter

Instructions

  • Prepare the Bread: Cut the day-old bread into 1-inch cubes and set aside.
  • Make the Custard: In a large mixing bowl, whisk together eggs, milk, heavy cream, sugar, vanilla, and cinnamon until smooth.
  • Soak the Bread: Add the bread cubes to the custard, stirring gently to ensure the bread is soaked. Let it sit for at least 10 minutes.
  • Preheat the Oven: Preheat your oven to 350°F (175°C) and grease or line a 12-cup muffin tin.
  • Fill the Muffin Tin: Divide the soaked bread mixture evenly into the muffin cups, pressing down lightly.
  • Prepare the Topping: In a small bowl, mix sugar and cinnamon. Drizzle melted butter over the muffins and sprinkle with cinnamon sugar.
  • Bake: Bake for 20-25 minutes or until the muffins are golden brown and a toothpick inserted comes out clean.
  • Cool and Serve: Let the muffins cool slightly in the tin, then transfer to a wire rack. Serve warm, optionally with maple syrup.

Notes

  • Variations:
    • Maple Syrup Drizzle: Add a drizzle of warm maple syrup over the muffins for extra sweetness.
    • Cream Cheese Filling: Add a dollop of sweetened cream cheese in the center of each muffin before baking.
    • Fresh Fruit: Add blueberries or diced apples to the bread mixture for added flavor.
    • Streusel Topping: Top with a buttery streusel for extra crunch.
    • Chocolate Chip Version: Stir mini chocolate chips into the mixture for a chocolate twist.
    • Gluten-Free Option: Use gluten-free bread for a gluten-free version.
    • French Toast Casserole: Make this into a casserole by using a 9×13-inch baking dish instead of a muffin tin.
  • Storage/Reheating: Store leftovers in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator. To reheat, microwave for 15-20 seconds or bake at 350°F for 5 minutes
