Coconut Vanilla Panna Cotta is a creamy, smooth dessert made with rich coconut milk and heavy cream, delicately sweetened and infused with vanilla. It’s the perfect make-ahead treat for a dinner party or a light, elegant ending to any meal.

Ingredients

1 cup coconut milk

1 cup heavy cream

½ cup granulated sugar

1 tablespoon vanilla extract

1 packet (2 ¼ teaspoons) unflavored gelatin

3 tablespoons cold water

Pinch of salt

Instructions

  1. In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes.
  2. In a saucepan over medium heat, combine coconut milk, heavy cream, sugar, vanilla extract, and salt. Stir until sugar dissolves and the mixture is warm, not boiling.
  3. Remove from heat and stir in the bloomed gelatin until fully dissolved.
  4. Pour the mixture into individual ramekins or dessert glasses.
  5. Refrigerate for at least 4 hours or until set.
  6. Serve chilled, garnished with toasted coconut flakes or fresh fruit if desired.

Notes

Add a layer of mango or passionfruit puree for a tropical twist.

Use almond milk instead of coconut milk for a different flavor profile.
