These Copycat Klondike Bars are a homemade version of the classic frozen treat, featuring creamy vanilla ice cream covered in a crispy, glossy chocolate shell. An easy-to-make dessert that brings the beloved Klondike Bar experience right to your kitchen, perfect for satisfying your sweet tooth.

Ingredients

4 cups vanilla ice cream, slightly softened

2 cups semisweet chocolate chips

3 tablespoons coconut oil

¼ cup powdered sugar

1 teaspoon vanilla extract

¼ teaspoon salt

Nonstick parchment paper

8-inch square baking pan

Instructions

  • Line an 8-inch square baking pan with parchment paper, leaving overhang for easy removal.

  • Spread softened vanilla ice cream evenly into the pan, smoothing the top. Freeze for at least 2 hours until firm.

  • Lift the ice cream slab out using the parchment overhang. Cut into 8 squares and return to the freezer while preparing the chocolate coating.

  • In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until smooth. Stir in powdered sugar, vanilla extract, and salt until fully combined.

  • Quickly dip each ice cream square into the melted chocolate, coating completely. Place on a parchment-lined baking sheet and freeze for at least 1 hour until the chocolate sets.
