Cottage Cheese and Herb Biscuits are light, fluffy, and full of savory flavor. With the richness of cottage cheese for moisture and fresh herbs for a burst of fragrance, these biscuits are perfect for soups, stews, or as a snack on their own.

Ingredients

1 cup cottage cheese

2 cups flour

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon salt

¼ cup fresh herbs (such as chives, parsley, dill), chopped

¼ cup cold butter, cubed

½ cup milk

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Add the cold, cubed butter and use a pastry cutter or your hands to work it into the dry ingredients until it resembles coarse crumbs.
  4. Stir in the cottage cheese, fresh herbs, and milk until just combined. Be careful not to overmix.
  5. Drop spoonfuls of dough onto the prepared baking sheet. Shape them with your hands for a uniform appearance if desired.
  6. Bake for 12-15 minutes, or until the biscuits are golden brown on top.
  7. Let the biscuits cool slightly before serving. Enjoy them warm!

Notes

Use a mix of herbs like thyme, rosemary, or basil for different flavor profiles.

To make these biscuits vegan, substitute the butter with plant-based butter and use dairy-free milk.

For extra cheesy biscuits, add shredded cheddar or Parmesan to the dough.
