Cottage Cheese Banana Bread is a protein-packed, moist, and naturally sweetened twist on classic banana bread. This gluten-free, naturally sweetened loaf is easy to make and customizable with mix-ins like chocolate chips, nuts, or berries.

Ingredients

  • 2 ripe bananas, mashed
  • 3 eggs
  • ½ cup cottage cheese
  • 3 tbsp maple syrup (adjust for sweetness)
  • 2 tsp vanilla extract
  • 2 ½ cups almond flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • Optional mix-ins: walnuts, chocolate chips, or blueberries

Instructions

  • Preheat the Oven – Set to 350°F (175°C). Line an 8×4-inch loaf pan with parchment paper and lightly grease it.
  • Mix Wet Ingredients – In a large bowl, combine mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract until smooth.
  • Add Dry Ingredients – Stir in almond flour, baking soda, and cinnamon. If using mix-ins, fold them in gently.
  • Transfer to Pan – Pour batter evenly into the prepared loaf pan.
  • Bake – Bake for about 50 minutes. If browning too quickly, tent with foil after 30 minutes.
  • Check for Doneness – Insert a toothpick into the center; it should come out clean or with a few moist crumbs.
  • Cool & Serve – Let the bread cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy!
