This Creamy Cajun Chicken Pasta features juicy Cajun-seasoned chicken, tender linguine, and a rich, velvety sauce infused with bold Cajun spices and Parmesan. Ingredients

  • 8 oz linguine pasta
  • 2 boneless, skinless chicken breasts
  • 2 tsp olive oil
  • 2 tbsp unsalted butter
  • 1 1/2 to 2 tbsp Cajun seasoning, divided (adjust to taste)
  • 3 garlic cloves, minced
  • 2/3 cup diced tomatoes
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp parsley, finely chopped (for serving)

Instructions

  1. Prepare the Pasta:
    Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and keep the pasta warm.

  2. Prepare and Cook the Chicken:
    Flatten the chicken breasts to an even thickness and season with 1 1/2 tbsp Cajun seasoning.
    Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5-7 minutes per side until fully cooked.
    Remove the chicken from the skillet, slice thinly, and keep warm.

  3. Make the Sauce:
    In the same skillet, melt the butter and sauté the garlic until fragrant.
    Add the diced tomatoes and cook for 2 minutes.
    Pour in the heavy cream, add the remaining Cajun seasoning, and stir in Parmesan cheese. Bring to a simmer and let it thicken slightly.

  4. Combine Everything:
    Add the sliced chicken and cooked linguine to the skillet with the sauce. Toss to combine.
    If the sauce is too thick, add the reserved pasta water a little at a time until desired consistency is reached.

  5. Serve:
    Plate the pasta and garnish with freshly grated Parmesan and chopped parsley before serving.
