Ingredients

  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 2 cups frozen corn kernels (or fresh if preferred)
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  • Sauté Aromatics: In a large pot, melt butter over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  • Cook Corn: Add corn kernels to the pot and cook for 3-4 minutes, stirring occasionally.
  • Add Liquids: Pour in vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes, allowing flavors to meld.
  • Blend (Optional): For a smoother texture, use an immersion blender to partially blend the soup, or transfer half of the mixture to a blender, blend until smooth, and return it to the pot.
  • Finish Chowder: Stir in heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes, then remove from heat.
