Crispy Black Bean Tacos are a quick and flavorful plant-based meal made with seasoned black beans, crunchy tortillas, and fresh toppings. Perfect for busy weeknights, these easy baked tacos are customizable, delicious, and ready in just 25 minutes

Ingredients

  • 2 cups cooked black beans (or one 15-ounce can, drained and rinsed)
  • ½ cup salsa
  • 1 tablespoon taco seasoning
  • 1 chipotle pepper in adobo sauce, minced (optional for added heat)
  • 2 green onions, sliced
  • Fresh cilantro, chopped
  • Juice of half a lime
  • 8 small flour or corn tortillas
  • Olive oil, for brushing

Instructions

  1. Prepare the Black Bean Filling:
    • In a food processor, combine the black beans, salsa, taco seasoning, minced chipotle pepper, green onions, cilantro, and lime juice.
    • Pulse until the mixture reaches a chunky consistency. Alternatively, mash the beans with a fork for a chunkier texture.
  2. Assemble the Tacos:
    • Preheat your oven to 450°F (230°C).
    • Lightly brush one side of each tortilla with olive oil and place them oil-side down on a baking sheet.
    • Spoon a portion of the black bean mixture onto one half of each tortilla. Sprinkle with vegan cheese if desired.
    • Fold the tortillas over to create a half-moon shape, pressing gently to seal.
  3. Bake the Tacos:
    • Bake for 6-8 minutes, then flip and bake for another 6-8 minutes, or until golden brown and crispy.
  4. Serve:
    • Remove from the oven and serve immediately with your choice of toppings and dipping sauces.

Notes

  • Protein Boost: Add cooked quinoa or lentils to the black bean mixture.
  • Different Beans: Swap black beans for pinto beans or chickpeas.
  • Spice Level: Adjust the heat by adding more or less chipotle pepper or include diced jalapeños.
