These Crispy Broccoli Cheese Bites are a flavorful and wholesome snack that combines finely chopped broccoli with melty cheese and spices, baked to golden perfection. They’re perfect for school lunches, party appetizers, or anytime snacking.

Ingredients

2 cups broccoli florets, finely chopped

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

1 cup breadcrumbs

2 eggs, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

Olive oil spray

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, mix chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, garlic powder, onion powder, paprika, salt, and pepper until well combined.
  3. Scoop out small portions and form into balls or patties.
  4. Arrange on the baking sheet and lightly spray the tops with olive oil.
  5. Bake for 18–20 minutes until golden brown and crispy.
  6. Let cool slightly before serving. Enjoy with your favorite dipping sauce.
